Few dishes offer the kind of deep, slow-cooked flavor and timeless comfort that French onion soup delivers. This version honors tradition while keeping things accessible for home cooks. Slowly caramelized onions, rich broth, and a golden crown of melty cheese on crisp bread—this soup feels like a warm hug in a bowl. Whether you’re preparing it for a cozy dinner on a cold evening or serving guests as a comforting appetizer, it’s bound to impress without being fussy.
What sets this version apart is the careful caramelization of the onions, a step that requires patience but rewards you with unmatched depth of flavor. The optional splash of dry white wine adds a bit of acidity to balance the richness, and fresh herbs like thyme and bay leaf help build a subtle, savory background. The crowning glory, of course, is the cheesy toast—crisp, gooey, and perfect for soaking up the broth.
This recipe is simple, honest food that tastes more luxurious than it is complicated. Pair it with a salad or enjoy it as a satisfying standalone meal. Either way, it’s classic comfort food done right.
Ingredients
(Serves 6)
100 g (3.5 oz) unsalted butter
1.25 kg (2.5 lb) brown or yellow onions, peeled, halved, and thinly sliced lengthwise
3/4 cup (185 ml) dry white wine (optional)
2 tbsp plain/all-purpose flour
1.5 litres (6 cups) good-quality low-sodium beef or chicken broth
2 dried bay leaves or 3 fresh ones (optional)
3 sprigs fresh thyme (optional)
Salt and pepper to taste
For the Cheesy Toast
6 to 8 slices of French baguette or similar soft bread
100 g (3.5 oz) Gruyère, mozzarella, or any good melting cheese
Fresh parsley or thyme leaves for garnish (optional)
Instructions
Melt butter in a large heavy pot over medium heat. Add onions and stir to coat. Lower the heat to medium-low and cook for about 30 minutes, stirring occasionally, until onions soften.
Raise the heat to medium-high, sprinkle in a pinch of salt, and continue cooking for 20–30 more minutes, stirring often, until onions are deeply golden and caramelized.
Deglaze with wine, if using, scraping the bottom of the pot. Let it simmer for 2 minutes until most liquid evaporates.
Sprinkle in flour and stir for about a minute to thicken slightly.
Pour in the broth and add herbs if using. Stir well.
Cover and simmer gently for 30 minutes. Season with salt and pepper to taste.
To make the cheesy toast, preheat your broiler. Lightly toast both sides of the bread. Top with cheese and broil until bubbling and golden.
Serve soup hot, topped with cheesy toast. Garnish with herbs if desired.
Nutritional and Dietary Notes
This soup provides a blend of slow-digesting carbohydrates from onions and bread, protein from cheese, and essential minerals from broth and herbs. While it’s not low-fat due to the butter and cheese, it’s rich in flavor and can be part of a balanced meal. For a vegetarian version, use vegetable broth and skip the cheese or substitute with a dairy-free option.
