Poulet Sauté Chasseur – Hunter’s Chicken

If you’ve ever dined in the cozy warmth of a Parisian bistro on a cool day, chances are you’ve encountered Poulet Chasseur—a dish affectionately known as Hunter’s Chicken. It’s a beloved classic of French country cooking, known for its rich, layered flavor and comforting aroma. This slow-cooked version captures the heart of traditional French cuisine while making it accessible to your home kitchen, especially with the help of a slow cooker. The combination of tender chicken, sautéed vegetables, crispy bacon, mushrooms, and a splash of wine makes this a hearty, soul-satisfying meal that tastes like it took all day—because it did, but without you needing to hover over the stove.

Traditionally served with mashed potatoes, crusty bread, or buttered noodles, this dish was once enjoyed after a long day of hunting—hence the name. Today, it’s more of a nostalgic, rustic dish made to comfort and impress. Using chicken thighs brings out more flavor, though chicken breasts work just fine if you prefer a leaner option. Whether you’re reminiscing about your favorite meal in Paris or trying something new, this dish makes a wonderful main course that feels both luxurious and effortless.

Ingredients (Serves 4)
2–2 1/4 lbs chicken (thighs preferred, but breasts work too)
3 slices bacon, diced
1 cup mushrooms, sliced
1 onion, diced
1 clove garlic, crushed
2 carrots, diced
2 celery stalks, diced
3/4 cup chicken stock
3/4 cup white wine
1/4 cup plain flour
2 tablespoons butter
1 tablespoon olive oil
1/3 cup tomato paste

Instructions
Heat butter and olive oil in a pan over medium heat. Brown the chicken on all sides, then remove and set aside.
In the same pan, sauté the diced bacon, onion, garlic, and mushrooms for about 2 minutes until fragrant.
Add carrots and celery, cooking for another 3 minutes to soften slightly.
Sprinkle in the flour, stirring to coat the mixture evenly.
Slowly pour in the chicken stock and white wine, then stir in the tomato paste until well combined.
Transfer everything, including the browned chicken, into a slow cooker. Cover and cook on low for about 5 hours, or until the chicken is tender and the sauce has thickened beautifully.
Serve hot, optionally over mashed potatoes, noodles, or fresh bread.

Nutritional and Dietary Insights
This dish offers a wholesome balance of protein from the chicken and bacon, fiber from the vegetables, and a savory richness from the slow-simmered sauce. While not considered low-fat due to the bacon and butter, it is nutrient-dense and satisfying. For a lower-fat version, opt for skinless chicken breasts and reduce the butter. It’s naturally gluten-containing due to the flour, but gluten-free flour can be substituted. Suitable for those following a high-protein, whole-food diet.
