Ingredients (Serves 6)
3 to 4 boneless, skinless chicken breasts (about 2 pounds)
1 packet taco seasoning (1 oz)
1 can cream of chicken soup, unsalted (10.5 oz)
1 can diced tomatoes with green chilies, undrained (10 oz)
1 box cheesy Mexican-style rice (about 7.6 oz)
Instructions
Place the chicken breasts in the bottom of the slow cooker.
In a separate bowl, mix together the taco seasoning, cream of chicken soup, and the undrained can of diced tomatoes with green chilies. Pour the mixture over the chicken.
Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours.
Once the chicken is cooked, shred it directly in the slow cooker using two forks.
Meanwhile, prepare the Mexican rice according to the package directions.
Stir the cooked rice into the shredded chicken and mix well. If the consistency is too thick, you can add a little chicken broth to loosen it.
