How To Make Stuffing Balls
Preheat Oven & Sauté Vegetables:
Preheat oven to 375°F (190°C) and lightly coat a baking sheet with nonstick spray. In a skillet, melt butter over medium heat and cook the chopped onion for about 10 minutes until softened. Add celery, parsley, sage, thyme, salt, and pepper. Stir and cook for another 5 minutes. Remove from heat.

Combine Ingredients:
In a large bowl, mix the toasted low-carb bread with the cornbread stuffing. Add the beaten egg and ¾ cup of chicken broth. Stir well, then add the sautéed vegetables and seasoning mixture. Mix until everything is evenly combined.

Form & Bake:
Shape the mixture into small, firm balls and place them on the prepared baking sheet. Bake for 20 minutes at 375°F (190°C).

Finish the Baking:
Carefully pour the remaining chicken broth over the stuffing balls. Place back in the oven and bake for another 15 minutes, or until golden brown and firm on the outside.
