Zucchini Garlic Bites

If you’re looking for a bite-sized snack that’s both healthy and full of flavor, these Herb-Infused Zucchini Garlic Bites are perfect for you. Made with freshly shredded zucchini and a blend of aromatic herbs, these bites are baked to golden perfection. They make a fantastic appetizer or snack and are ideal for parties, game days, or a quick, nutritious treat.

With just a few simple ingredients, these zucchini bites come together in no time. The addition of Parmigiano-Reggiano cheese gives them a rich, savory flavor, while the garlic adds a punch of spice. Serve them with a side of marinara sauce for dipping, and watch them disappear!

Ingredients

  • 1 cup shredded zucchini, drained well
  • 1 clove garlic, finely grated
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives (or 1 tablespoon dried chives)
  • 1 tablespoon chopped fresh parsley (or 1/2 tablespoon dried)
  • 1 teaspoon chopped fresh basil (or 1/2 teaspoon dried)
  • 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried)
  • Pinch of salt and pepper
  • Tomato sauce, for dipping

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400˚F (200˚C). Lightly coat a baking sheet with olive oil or non-stick spray. Set aside.
  2. Prepare the Zucchini:
    • Using a box grater, grate the zucchini into a clean towel. Roll up the towel and twist to wring out as much moisture as possible.
  3. Grate the Garlic:
    • Grate the garlic using the small holes on the box grater.
  4. Mix the Ingredients:
    • In a medium bowl, combine the shredded zucchini, grated garlic, egg, breadcrumbs, Parmigiano-Reggiano, chives, parsley, basil, oregano, salt, and pepper. Mix well to ensure all ingredients are evenly distributed.
  5. Shape the Bites:
    • Using your hands, shape a tablespoon of the mixture into small balls. Place each ball on the prepared baking sheet, leaving a little space between them.
  6. Bake:
    • Bake in the preheated oven for 15-18 minutes or until golden brown. Serve warm with marinara sauce for dipping.

Notes

How to Freeze:

  • Follow the recipe and allow the zucchini bites to cool completely. Arrange them in a single layer on a large baking sheet and flash freeze for one hour. Once frozen, transfer the bites to a freezer bag. Store them for up to 4 months in the freezer.

Reheating:

  • To reheat, preheat your oven to 400˚F (200˚C). Place the frozen zucchini garlic bites on a baking sheet and bake until heated through and crispy on the outside, about 10-15 minutes.
