Slow Cooker Garlic Herb Linguine with Caramelized Onions
Servings: 4

Ingredients:

Ingredient Quantity
Linguine pasta 8 oz
Onions, thinly sliced 2 large
Garlic, minced 4 cloves
Olive oil 2 tbsp
Butter 1 tbsp
Dried thyme 1 tsp
Dried oregano 1 tsp
Salt ½ tsp
Black pepper ¼ tsp
Vegetable broth 2 cups
Fresh parsley, chopped ¼ cup
Fresh chives, chopped ¼ cup
Grated Parmesan cheese (optional) ¼ cup

Directions:

  1. Caramelize the onions. In a skillet over medium heat, melt olive oil with butter. Add sliced onions and cook, stirring occasionally, until golden and caramelized, about 20–25 minutes.
  2. Add garlic. Stir in minced garlic and cook for 2 more minutes until fragrant.
  3. Transfer to slow cooker. Move the onions and garlic into the slow cooker.
  4. Add seasonings. Stir in dried thyme, dried oregano, salt, pepper, and vegetable broth.
  5. Add linguine. Break the pasta in half and submerge it in the liquid.
  6. Cook. Cover and cook on low for 2–3 hours, or until pasta is tender and has absorbed most of the liquid.
  7. Finish with herbs. Stir in chopped parsley and chives before serving.
  8. Serve. Plate the pasta hot, optionally topping with Parmesan cheese.
