Green beans, trimmed & cut 1 cup
Corn kernels (fresh/frozen) 1 cup
Diced tomatoes (undrained) 1 can (14.5 oz)
Beef broth 1 cup
Salt 1 teaspoon
Black pepper ½ teaspoon
Dried thyme 1 teaspoon
Shredded cheddar cheese 1 cup
Cooked egg noodles 2 cups

Directions
Preheat the oven to 350°F (175°C).
In a large skillet, cook the ground beef over medium heat until browned, then drain off any excess fat.
Add the chopped onion and minced garlic, sautéing until fragrant and translucent.
Stir in the carrots, green beans, and corn, cooking for about 5 minutes until the vegetables begin to soften.
Pour in the diced tomatoes with their juices, beef broth, salt, pepper, and thyme. Simmer gently for about 10 minutes.
Fold in the cooked egg noodles and half of the shredded cheddar cheese, stirring until everything is well combined.
Transfer the mixture into a greased 9×13-inch baking dish and spread it evenly.
Top with the remaining cheese.
Bake for 25–30 minutes, or until the cheese is melted, bubbly, and golden brown.
Let it cool slightly before serving.
