Instructions

  1. Heat a large skillet over medium heat. Add the ground beef and finely chopped onion. Cook for 6–8 minutes, breaking the beef into small crumbles, until browned and the onion is softened.
  2. Season with garlic powder, paprika, salt, and black pepper. Stir well, then drain off excess grease to keep the tortillas from turning soggy.
  3. If using the sauce, whisk mayonnaise, ketchup, and mustard in a small bowl until smooth and creamy.
  4. Lay a tortilla flat. Spoon a little sauce in the center, then add a portion of the seasoned beef, the cheddar (and mozzarella if using), pickles, shredded lettuce, and diced tomato.
