Cheesy Baked Chicken Tacos

Instructions

Cook the Filling:
Heat olive oil in a skillet over medium heat. Add the diced onion and garlic, and sauté until soft and fragrant. Stir in the shredded chicken, diced tomatoes, taco seasoning, and chicken broth. Let the mixture simmer for 5–6 minutes, stirring occasionally, until it thickens slightly and the flavors meld together.

Preheat the Oven:
Set your oven to 375°F (190°C) so it’s ready when the tacos are assembled.

Prepare the Baking Dish:
Lightly grease a 9×13-inch baking dish to keep the tacos from sticking.

Assemble the Tacos:
Spoon some of the chicken mixture into each tortilla, then sprinkle a bit of cheese inside before rolling them up. Place the rolled tacos seam-side down in the prepared baking dish.

Top with Cheese:
Sprinkle the remaining cheese evenly over the top of the tacos. If you’d like extra flavor and crunch, scatter diced red onion and chopped cilantro over the cheese.

Bake:
