Ingredients (Serves 6-8)

  • 2 large chicken breasts, cooked and shredded
  • 1 medium yellow onion, sliced into rounds and halved
  • 1 green, yellow, red, and orange pepper, seeded and sliced
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 2 tbsp fajita seasoning mix
  • 2 bags (8.8 oz each) Uncle Ben’s Ready Rice Spanish Style
  • 1 can (10.5 oz) cream of chicken soup
  • 2 medium flour tortillas
  • 2 cups shredded Colby/Jack cheese

Instructions

  1. Preheat Oven:
Preheat the oven to 350°F (175°C).
  2. Prepare the Vegetables:
In a skillet over medium-high heat, sauté the onion and peppers with garlic in olive oil until tender.
  3. Cook the Rice and Chicken:
Prepare the Uncle Ben’s Ready Rice Spanish Style according to package directions. Shred the cooked chicken breasts and toss with the fajita seasoning. Add the cream of chicken soup and cooked rice to a large bowl, stirring to combine.
  4. Assemble the Casserole:
Grease a 9″x13″ baking dish. Spread the chicken and rice mixture evenly in the dish. Layer two flour tortillas, allowing them to overlap in the center. Spread the sautéed pepper mixture over the tortillas and sprinkle with shredded cheese.
  5. Bake:
Cover the dish with foil and bake for 30 minutes. Remove the foil during the last 5-7 minutes to allow the cheese to melt and become golden.
  6. Serve:
Let the casserole rest for a few minutes before serving.

Nutritional Information and Dietary Concerns

This Chicken Fajita Casserole offers a well-balanced meal, combining lean protein from the chicken with colorful vegetables for added nutrients. The use of whole grain rice provides fiber, while the flour tortillas contribute a source of carbohydrates. If you’re looking for gluten-free options, simply swap the tortillas for corn tortillas or a gluten-free alternative. For those seeking lower-fat options, you can opt for reduced-fat cheese or omit the cream of chicken soup and use a lighter sauce or broth instead.
