Servings: 4

Ingredients

  • 1 lb boneless, skinless chicken breasts (about two large pieces)
  • 1 cup celery, diced
  • 1 cup onion, finely chopped
  • 2 tablespoons olive oil
  • 1/2 tablespoon garlic, finely minced
  • 1 cup carrots, sliced into 1/4-inch rounds
  • 1 cup Yukon gold potatoes, peeled and quartered (for blending later)
  • 2 cups Yukon gold potatoes, peeled and diced (for soup texture)
  • 3 cups chicken broth (low sodium or bone broth)
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried parsley
  • 1/2 cup milk of choice (almond milk, whole milk, or another variety)
  • 1 tablespoon fresh parsley (for garnish)

Instructions

Instant Pot Method:

  1. Turn the Instant Pot to the sauté function and heat the olive oil. Lightly sear the chicken breasts for about 2 minutes on each side. Remove and set aside.
  2. Add celery, onion, carrots, garlic, salt, pepper, parsley, basil, and rosemary. Sauté for 2 minutes until slightly softened.
  3. Stir in the diced potatoes, then place the chicken breasts on top, followed by the quartered potatoes. Pour in the chicken broth.
  4. Seal the Instant Pot and set it to high pressure for 9 minutes. Allow a 5-minute natural release, then manually release the remaining pressure.
  5. Remove the large potato pieces and chicken. Blend the large potatoes with milk and 1/2 cup of broth until smooth, then return to the pot.
  6. Shred the chicken, stir it back in, and mix everything until well combined. Garnish with fresh parsley and serve.

Slow Cooker Method:

  1. In a skillet, heat olive oil and sauté the celery, onion, carrots, garlic, salt, pepper, parsley, basil, and rosemary for 2 minutes (optional but recommended).
  2. Layer the raw chicken, sautéed vegetables, and both types of potatoes in the slow cooker. Pour in the broth.
  3. Cover and cook on low for 6 hours.
  4. Remove the large potatoes and chicken. Blend the potatoes with milk and some broth, then return to the pot.
  5. Shred the chicken, mix everything together, and serve with fresh parsley.

Stovetop Method:

  1. Heat olive oil in a large pot over medium heat. Add the celery, onion, carrots, garlic, salt, pepper, parsley, basil, and rosemary. Sauté for 2 minutes.
  2. Add the raw chicken, potatoes, and broth. Cover and bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Remove the large potatoes and chicken. Blend the potatoes with milk and broth until smooth, then return to the pot.
  4. Shred the chicken, stir everything together, and serve with fresh parsley.
