Heavy cream ½ cup
Dijon mustard (optional) 1 tsp

Directions

Prepare the Chicken:
Pat the chicken breasts dry with paper towels to help them sear nicely. Season both sides generously with salt and black pepper.

Sear the Chicken:
Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 4–5 minutes per side until golden brown and fully cooked through (internal temperature should reach 165°F / 74°C). Transfer the chicken to a plate and set aside.

Make the Sauce Base:
Lower the heat to medium. Add the minced garlic to the same skillet and sauté for about 30 seconds, just until fragrant.

Deglaze with Broth:
Pour in the chicken broth and use a wooden spoon to scrape up any browned bits stuck to the pan. Let the mixture simmer for 2–3 minutes to deepen the flavor.

Melt the Boursin:
Add the Boursin cheese to the skillet and stir until it melts completely into the broth, creating a smooth, creamy base.

Add Cream and Dijon:
Stir in the heavy cream and Dijon mustard (if using). Let the sauce simmer gently for 3–4 minutes until it thickens slightly.

Return the Chicken to the Sauce:
Place the seared chicken breasts back into the skillet. Spoon the sauce over each piece and let them simmer together for 2–3 minutes so the flavors meld beautifully.

Serve:
Garnish with freshly chopped parsley and serve the chicken hot. This creamy Boursin sauce pairs perfectly with mashed potatoes, rice, or simple steamed vegetables for a balanced, comforting meal.
