Chili Parlor Chili

Ingredients:

Ingredient Quantity
Olive oil 1 tablespoon
Ground beef (90/10 or 80/20) 1 pound
Beef or chicken broth 2 cups
Tomato sauce or puree ½ cup
Chili powder 1 tablespoon
Unsweetened cocoa powder 1 tablespoon
Worcestershire sauce 2 teaspoons
Chili flakes 2 teaspoons
Paprika 2 teaspoons
Soy sauce 2 teaspoons
Onion powder 1 teaspoon
Garlic powder 1 teaspoon
Cayenne pepper ½ teaspoon
Kosher salt and freshly ground black pepper To taste

Instructions:
Step 1: Brown the Beef
Heat the olive oil in a large pot over medium heat. Add the ground beef and cook for about 3–5 minutes, breaking it apart with a spoon until it’s nicely browned.

Step 2: Add the Flavor
Pour in the broth and tomato sauce, then stir in the chili powder, cocoa powder, Worcestershire sauce, chili flakes, paprika, soy sauce, onion powder, garlic powder, and cayenne pepper. Mix everything together until fully combined.

Step 3: Let It Simmer
Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let it cook for 35–40 minutes, stirring occasionally to keep the flavors blending evenly.

Step 4: Season and Serve
Taste and adjust the seasoning with salt and freshly ground black pepper as needed. Ladle the chili into bowls and serve it hot, just like a classic chili parlor would.
