Chocolate Marble Bread
Ingredients:
| Ingredient | Quantity |
|---|---|
| Semisweet or bittersweet chocolate, coarsely chopped | 115 g (4 oz) |
| Coffee or water | 2 tbsp |
| Cake flour, sifted | 195 g (1 ½ cups + 2 tbsp) |
| Baking powder | 2 tsp |
| Salt | ¼ tsp |
| Unsalted butter, room temperature | 113 g (½ cup) |
| Granulated sugar | 200 g (1 cup) |
| Eggs | 2 large |
| Pure vanilla extract | 1 tsp |
| Sour cream or plain yoghurt, room temperature | 120 ml (½ cup) |
Instructions:
- Preheat your oven to 350°F (180°C). Grease a 9×5×3-inch (23×13×8 cm) loaf pan with melted butter or nonstick spray and line the bottom with parchment paper.
- In a heatproof stainless steel bowl, melt the chocolate with the coffee or water over simmering water. Remove from heat and allow to cool to room temperature.
- In a separate bowl, sift together the cake flour, baking powder, and salt.
- Using an electric mixer or hand mixer, beat the room-temperature butter until smooth. Add the sugar and continue mixing for about 3 minutes until light and fluffy. Beat in the eggs, one at a time, then add the vanilla extract, scraping down the sides of the bowl as needed.
- With the mixer on low, alternately fold in the flour mixture (in three additions) and sour cream (in two additions), starting and ending with the flour.
- Transfer just under half of the batter into another bowl and fold in the cooled melted chocolate.
- Using two spoons, alternately place spoonfuls of the vanilla and chocolate batter into the prepared loaf pan. Run a wooden skewer or knife lightly through the batter to create a marbled effect—do not overmix.
- Bake in the preheated oven for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and cool on a wire rack for 10 minutes, then carefully remove from the pan. Cool completely before slicing. Store in a covered container at room temperature or freeze for later enjoyment.
