Inspired by Tex-Mex flavors, it’s creamy, cheesy, and loaded with just enough flavor to satisfy both kids and adults. With only three ingredients and a slow cooker doing all the work, you can enjoy time with family instead of hovering over the stove. Slow Cooker 3-Ingredient Queso Dip

Diced tomatoes with green chiles (undrained, such as Rotel) 1 (10-ounce) can
Milk (whole or 2%) 1 cup

Instructions

  1. Prepare the slow cooker by lightly spraying the inside with nonstick cooking spray, or line it with a slow-cooker liner for easier cleanup.
  2. Place the cubed cheese in the slow cooker. Pour the diced tomatoes with green chiles (including liquid) over the cheese. Add the milk.
  3. Cover and cook on LOW for 1.5–2 hours or on HIGH for about 1 hour, until the cheese is fully melted.
  4. Stir the mixture until smooth and creamy. If it seems too thick, add a splash of milk until it reaches your preferred consistency.
  5. Keep the dip warm by setting the slow cooker to WARM, stirring occasionally to maintain a silky texture and prevent skin from forming.
  6. Serve straight from the slow cooker with tortilla chips, pretzel bites, veggies, or any favorite dippers.

Variations & Tips
For milder flavors, use mild diced tomatoes with green chiles or plain petite diced tomatoes. Add heat with salsa or a pinch of chili powder once the cheese is melted. For extra protein, brown ½–1 pound of ground beef, turkey, or chorizo with salt and cumin, drain excess fat, and stir it in. A lighter version can be made with 2% cheese and low-fat milk—just adjust milk for desired creaminess. Sneak in extra veggies by folding in finely chopped bell peppers or sautéed onions; the cheese hides them perfectly. For travel-friendly queso, assemble in the slow cooker insert at home, then plug it in at the destination to melt and keep warm.
