Instructions:
- Preheat your oven to 350°F (180°C) and line a muffin pan with cupcake liners.
- In a mixing bowl, combine the eggs and granulated sugar. Using an electric mixer, beat on high speed for about 5 minutes until the mixture is thick and pale.
- Sift the flour and baking powder into the egg mixture. Mix briefly on low speed for 10 seconds, then fold gently with a spatula until smooth and lump-free. Set the batter aside.
