CRUSTLESS QUICHE WITH BACON, SPINACH, CARROTS, SPRING ONIONS & CHEESE

| Fresh baby spinach | 150g / 5oz |
| Carrots (shredded) | ½ cup |

| Shredded cheddar | 100g / 3.5oz |
| Salt & pepper | To taste |
Instructions
Prepare the Egg Mixture:
Beat the eggs in a large bowl and combine with the cream. Add shredded cheddar, salt, and pepper, mixing until smooth.
Cook the Bacon and Spinach:
Fry the chopped bacon until crisp, then remove from the pan and set aside. In the same pan, add a tablespoon of olive oil and cook the spinach just until it wilts.
Assemble the Quiche:
Butter a 28cm pie dish. Layer the spinach on the bottom, then add the cooked bacon, shredded carrots, and sliced spring onions. Finish with a little extra spinach on top. Pour the egg mixture over the vegetables and gently stir with a fork to ensure everything is evenly coated.
Bake:
Sprinkle a little extra shredded cheddar on top and bake in a preheated oven at 190°C / 375°F for 45 minutes, or until the quiche is fully set and golden.
