Ingredients:

For the Salad:

Ground beef 1 pound
Taco seasoning 1 packet
Water ¼ cup
Romaine lettuce, chopped 1 head
Cherry tomatoes, halved 2 cups
Shredded Cheddar cheese 1 cup
Red onion, diced ½ cup
Black beans, drained and rinsed 1 can (15 oz)
Corn kernels (fresh, canned, or frozen) 1 cup
Crushed Doritos (nacho cheese flavor) 2 cups

For the Dressing:

Catalina dressing (or ranch dressing) 1 cup
Lime juice (optional) Juice of 1 lime

Instructions:
Cook the Ground Beef: Heat a large skillet over medium. Cook beef until browned, breaking it apart as it cooks. Drain excess fat, then stir in taco seasoning and water. Let simmer 2–3 minutes until well coated. Set aside to cool slightly.
Prepare the Salad: In a large bowl, combine lettuce, tomatoes, cheddar, red onion, black beans, and corn. Toss gently to mix.
Add Beef & Doritos: Stir the seasoned ground beef into the salad. Just before serving, fold in the crushed Doritos so they stay crispy.
Dress the Salad: Pour Catalina (or ranch) dressing over the salad and toss to coat evenly. Add a squeeze of lime juice if you like a tangy kick.
