Easy and Delicious Poor Man’s Stroganoff

Try our comforting and flavorful recipe for Slow Cooker Poor Man’s Stroganoff! This dish has a special place in my heart because it brings back fond memories from my childhood. Growing up, we didn’t have much, but my mom had a talent for turning simple ingredients into delicious meals that warmed both our stomachs and hearts. Poor Man’s Stroganoff was one of her budget-friendly adaptations of the classic Russian dish. With its rich and creamy sauce, tender ground beef, and earthy mushrooms, it felt indulgent even when we were stretching our resources.

Whenever my mom made this dish, the aroma would fill our home, drawing everyone to the kitchen in eager anticipation. As the ingredients simmered in the slow cooker for hours, the flavors blended into a delightful symphony of tastes. The first bite would transport us to a place of comfort and contentment, a welcome escape from life’s worries. It became a staple at our dinner table, reminding us that a little creativity and love could transform the simplest ingredients into something truly special. Today, I’m sharing this recipe with you, hoping it not only fills your belly but also brings a sense of warmth and nostalgia, just as it has for me and my family over the years.

Ingredients:

Instructions:

  1. Heat a skillet over medium heat and brown the ground beef until fully cooked. Drain any excess fat from the skillet.
  2. Transfer the cooked ground beef to the slow cooker.
  3. In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant, about 2-3 minutes.
  4. Add the sautéed onion and garlic to the slow cooker with the ground beef.
  5. Add the condensed cream of mushroom soup, beef broth, Worcestershire sauce, Dijon mustard, and sliced mushrooms to the slow cooker. Stir well to combine all the ingredients.
  6. Season with salt and pepper according to your taste.
  7. Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours. This allows the flavors to meld together and the meat to become tender.
  8. Just before serving, stir in the sour cream until well incorporated into the sauce.

Tips:

  1. Serve the Poor Man’s Stroganoff over cooked egg noodles or rice.
  2. Garnish with freshly chopped parsley, if desired.

Enjoy!
