Servings: 10 servings

Ingredients:

  • 1 kilogram pasta
  • 1 pack (250g) bacon or ham, fried and chopped (bacon is preferred)
  • 1 large can (400g) sliced mushrooms (washed and drained from preservatives)
  • 2 packs (70g/pack) Knorr cream of mushroom soup (dissolved in 500ml or 2 cups hot water)
  • 1 small onion, minced
  • 4 cloves garlic, minced
  • 1 large can evaporated milk or water
  • 2 packs Nestle all-purpose cream (250ml/pack)
  • 1 tbsp sugar
  • Pinch of white pepper
  • Finely chopped parsley or basil for garnish (optional)
  • 1 cup grated cheese (for garnish)
  • Garlic bread (side dish)

Instructions:

  1. Cook the pasta according to the package instructions. Once cooked, drain and set aside.
  2. In a saucepan, sauté garlic until slightly brown, then add the minced onion and cook until translucent. (Using the bacon oil adds extra flavor.) Add the sliced mushrooms and cook for 2-3 minutes.
  3. Add the milk, cream of mushroom soup, and all-purpose cream to the pan. Stir and bring to a boil, constantly stirring until the mixture thickens. Note that the sauce will thicken more as it cools down.
  4. Add the fried bacon or ham to the sauce.
  5. Season with a pinch of sugar and white pepper. Since the cream of mushroom soup is already salted, additional salt may not be necessary.
  6. Garnish with finely chopped parsley or basil and grated cheese. Serve with garlic bread and enjoy!

Nutritional Insights & Dietary Considerations:
This creamy carbonara offers a rich, satisfying meal that combines carbs from the pasta, fats from the bacon and cream, and protein. For those looking to cut down on fat, you could substitute lighter versions of the cream and use turkey bacon instead of regular bacon. Those with dairy sensitivities may want to try dairy-free alternatives to the cream and milk. This dish is not suitable for those on a gluten-free diet unless a gluten-free pasta is used.
