Slow Cooker Tomato Parmesan Soup
Servings: 6–8 servings

Ingredients

Ingredient Quantity
Crushed tomatoes 2 (28-ounce) cans
Medium onion, finely chopped 1
Garlic, minced 3–4 cloves
Vegetable or chicken broth 4 cups
Heavy cream 1 cup
Grated Parmesan cheese 1 cup
Olive oil 2 tablespoons
Dried oregano 1 teaspoon
Dried basil 1 teaspoon
Sugar 1 teaspoon
Salt and pepper To taste
Fresh basil, chopped (optional, for garnish)

Directions

  1. Warm the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute or two until fragrant.
  2. Transfer the sautéed mixture to your slow cooker. Add crushed tomatoes, broth, oregano, basil, and sugar. Stir to combine everything well.
  3. Cover and cook on low for 6–8 hours or high for 3–4 hours, allowing the flavors to blend beautifully.
  4. About 30 minutes before serving, use an immersion blender to puree the soup until smooth. If you enjoy a bit of texture, only blend half.
  5. Stir in the heavy cream and grated Parmesan cheese. Let it cook for another 15–20 minutes until the cheese melts and the soup is hot and creamy.
  6. Taste and adjust seasoning with salt and pepper.
  7. Serve warm and, if you like, garnish with freshly chopped basil for a burst of freshness.

Variations & Tips

If you want a vegan twist, swap heavy cream for coconut or cashew cream and use nutritional yeast instead of Parmesan. You can also add roasted red peppers for a smoky touch. For extra protein, toss in shredded chicken or cooked Italian sausage during the final hour. Fresh herbs like thyme or rosemary bring a delightful change of flavor, while a handful of spinach blended at the end adds nutrition and a beautiful green hue without altering the taste.

This slow cooker soup is perfect for meal prep, cozy dinners, or serving guests — simple ingredients, big flavor, and pure comfort in every spoonful.
