Servings: Makes 6 servings

Ingredients
1 lb ground beef
1 can cream of mushroom soup
1 can tomato soup
1 can whole kernel corn, drained
2 tsp chili powder
1 onion, chopped
1 ½ cups cooked and drained macaroni noodles
Grated cheddar cheese, enough to cover casserole

Instructions
Preheat the oven to 350°F. Cook macaroni noodles according to package directions.
Brown ground beef with chopped onion in a skillet. Add chili powder and season with salt and pepper to taste.
In a large bowl, mix together the cream of mushroom soup, tomato soup, and corn. Add the cooked ground beef mixture and macaroni noodles, and stir until well combined.
Transfer the mixture into a greased 9×13 baking dish. Bake for 35-40 minutes. During the last 15 minutes of baking, sprinkle the top with grated cheddar cheese and continue baking until the cheese is melted and bubbly.

Nutritional and Dietary Notes
Hamburger Casserole provides a good source of protein from the ground beef and cheese. The pasta and soups bring in carbohydrates and fiber, and the corn adds some extra vitamins and minerals. For a lighter version, consider using lean ground beef, low-fat soups, and reduced-fat cheese. If you’re following a gluten-free diet, swap out the macaroni for gluten-free pasta.
