Instructions

Step 1: Prepare and Sift
Preheat the oven to 350°F (175°C) and generously grease two muffin tins. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and all the spices until well combined.

Step 2: Cream the Base
In a large bowl, beat the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the molasses and buttermilk until smooth.

Step 3: Mix the Batter
Gently fold the dry ingredients into the wet mixture just until incorporated. Stir in the hot water and raisins. The batter will be thinner than standard muffin batter, which is normal for Sailor Jacks.

Step 4: Bake
