How to Make Company Chicken Casserole:
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. Season the chicken breasts with salt and pepper, then cook them in olive oil over medium heat until golden on both sides. Set aside to cool slightly.

In the same pan, sauté the onion, garlic, bell pepper, and mushrooms until softened and fragrant. In a large mixing bowl, combine the sautéed vegetables with the peas, corn, cream of chicken soup, chicken broth, sour cream, and cheddar cheese. Stir until everything is well mixed.

Pour this creamy mixture into the prepared baking dish and place the cooked chicken breasts on top. In a separate bowl, mix the crushed butter crackers with melted butter and sprinkle the mixture evenly over the casserole.

Bake for 25–30 minutes, or until the casserole is bubbly and the topping is golden brown. Let it rest for a few minutes before serving. For a final touch, garnish with fresh parsley if you’d like a pop of color.
