Magic Custard Cake

Ingredients:

For the Cake:

Ingredient Quantity
Unsalted butter, melted ½ cup
Granulated sugar 1 cup
Large eggs 2
Vanilla extract 1 teaspoon
All-purpose flour 1 cup
Baking powder 1 teaspoon
Salt ¼ teaspoon

For the Custard:

Ingredient Quantity
Large eggs 3
Whole milk (or half-and-half for richness) 1 cup
Granulated sugar ½ cup
All-purpose flour 1 tablespoon
Vanilla extract 1 teaspoon
Salt Pinch

Instructions:

  1. Preheat the Oven: Heat oven to 350°F (175°C). Grease an 8×8-inch square baking pan or line it with parchment, leaving an overhang for easy removal.
  2. Make the Cake Batter: In a bowl, whisk together melted butter, granulated sugar, eggs, and vanilla until smooth. Sift in flour, baking powder, and salt, then gently stir until just combined. A few lumps are fine—avoid overmixing.
  3. Prepare the Custard: In a separate bowl, whisk eggs, milk, sugar, flour, vanilla, and a pinch of salt until completely smooth with no flour lumps.
  4. Layer Carefully: Pour the custard mixture into the prepared pan. Gently spoon the cake batter on top, spreading evenly without mixing the two layers. The magic happens in the oven!
  5. Bake Until Golden: Bake 40–45 minutes, or until the top cake layer is golden and a toothpick inserted into it comes out clean. Rotate the pan halfway for even baking.
  6. Cool & Serve: Let cool at least 15–20 minutes before slicing, or chill in the fridge for a few hours to help the custard set firmly. Dust with powdered sugar, garnish with fresh berries, or drizzle with caramel before serving.

Tips for Success:

  • Don’t Mix Layers: The separation happens naturally due to density differences, so resist the urge to stir.
  • Use Room-Temperature Eggs: They blend more smoothly and create a better texture.
  • Adjust Sweetness: Reduce sugar slightly in either layer if you prefer a less-sweet dessert.
  • Make It Gluten-Free: Swap in a quality gluten-free flour blend (with xanthan gum included) for both layers.

This cake isn’t just dessert—it’s a conversation starter. One bite, and your guests will swear you worked dessert magic!
