Ingredients (Meatloaf)

Instructions

  1. Preheat & Prep the Base: Preheat your oven to 350°F (175°C). In a medium bowl, beat 2 eggs, then stir in 2/3 cup milk and the 25 crushed Ritz crackers until well combined.
  2. Add Fillers: Fold in the diced onion and shredded cheddar cheese. Season with 1 tsp salt and 1/4 tsp pepper.
  3. Combine with Meat: Gently mix in 1 1/2 lbs of ground beef using your hands. Mix just until everything comes together—don’t overwork it or the meatloaf can get tough.
  4. Initial Bake: Spray an 8×8-inch baking dish with nonstick spray. Shape the meat mixture in the dish and bake for 45 minutes until it’s mostly cooked through.
  5. Prepare the Glaze: While the meatloaf is baking, combine 1/2 cup ketchup, 1/2 cup brown sugar, and 1 tsp mustard in a small bowl.
  6. First Glaze: Spread half of the glaze evenly over the meatloaf after the first 45 minutes. Return it to the oven and bake for another 15 minutes.
  7. Second Glaze & Finish: Spread the remaining glaze over the meatloaf and bake a final 15 minutes, or until the internal temperature reaches 165°F (75°C). Let it rest briefly before slicing.
