Chopped onion ½ cup
Chopped bell pepper ½ cup
Worcestershire sauce 2 tsp
Chopped fresh parsley 2 Tbsp
Dijon mustard 1 tsp
BBQ sauce ¼ cup
Bread crumbs ⅔ cup
Italian seasoning 1 tsp
Garlic powder 1 tsp
Large egg 1
Salt and pepper To taste

Ketchup ¼ cup
Honey 1 Tbsp

How To Make Mini Meatloaf Muffins:
Step 1: Prep & Mix: Preheat oven to 350°F (175°C). In a large bowl, combine ground beef, onion, bell pepper, Worcestershire sauce, parsley, Dijon mustard, ¼ cup BBQ sauce, bread crumbs, Italian seasoning, garlic powder, egg, salt, and pepper. Mix gently with your hands until just combined.
Step 2: Form & Fill: Grease a muffin tin and divide the mixture evenly into 10 sections, pressing lightly to shape.
Step 3: Make the Glaze & Top: In a small bowl, stir together ¼ cup BBQ sauce, ketchup, and honey. Spoon the glaze over each mini meatloaf.
Step 4: Bake: Place the muffin tin in the oven and bake for about 25 minutes, or until the meatloaves are fully cooked through and nicely browned.
