This is a recipe my grandma passed down, and it’s one I make all year round. Crispy potato wedges spiced with a savory blend and paired with a tangy, creamy “Mojo” dipping sauce—perfect as a side or an appetizer with just the right kick.

Mojo Potatoes Recipe

Ingredients:

For the Spice Blend:

Thyme 1/2 teaspoon
Blended black pepper 1/4 teaspoon
Cayenne 1/2 teaspoon

For the Sauce:

Mayonnaise 1/2 pound
Garlic powder 1/4 teaspoon
Lemon juice 50%
Pepper Pinch
Salt Pinch
Smoked paprika Pinch

How To Make Mojo Potatoes:

Step 1: Preheat Oven
Set your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil.

Step 2: Prepare Potatoes
Wash and scrub the potatoes, then dry them thoroughly. Cut them into evenly sized wedges or cubes.

Step 3: Make Spice Blend
In a small bowl, combine oregano, thyme, black pepper, and cayenne to create a flavorful spice mix.

Step 4: Season Potatoes
Toss the potato pieces in the spice blend until they are coated evenly. A light drizzle of olive oil helps the spices stick better, though it’s optional.

Step 5: Bake Potatoes
Place the seasoned potatoes on the prepared baking sheet. Bake for 25–30 minutes until golden and crispy, flipping halfway through for even cooking.

Step 6: Prepare Sauce
While the potatoes are baking, mix mayonnaise, garlic powder, lemon juice, pepper, salt, and smoked paprika in a bowl. Whisk until smooth and creamy.
