Stewing beef 1½ lbs
Mushrooms 1½ cups
Onion 1 large
Fresh thyme 4 sprigs
All-purpose flour ⅓ cup
Garlic powder ½ tsp
Table salt ½ tsp
Ground black pepper ½ tsp
Paprika ½ tsp
Sunflower oil 2 tbsp
Soft butter 2 tbsp
Low sodium beef broth ⅔ cup
Dry egg noodles 8 oz (1 pkg.)
Sour cream As needed (see instructions)
Gravy cube As needed (see instructions)
Cornstarch As needed (see instructions)
Fresh parsley 1 tbsp

Instructions

Step 1: Preheat Oven (Initial)
Preheat your oven to 300°F (150°C).

Step 2: Prepare Beef
Trim any excess fat from the stewing beef and cut it into bite-sized pieces.

Step 3: Dredge Beef
In a large bowl, mix the flour, garlic powder, salt, black pepper, and paprika. Toss the beef pieces in the mixture until evenly coated.

Step 4: Sear Beef
Heat sunflower oil and butter in a skillet over medium-high heat. Sear the beef in batches until each piece has a browned crust, about 3 minutes per side. Transfer the beef to a 9×13-inch baking pan.

Step 5: Assemble Casserole
Add halved mushrooms, chopped onion, and thyme sprigs to the pan. Pour in the beef broth and stir to combine. Cover with foil and bake at 300°F (150°C) for 2 hours until the beef is fork-tender.

Step 6: Cook Egg Noodles
Boil the egg noodles for 2 minutes less than package instructions for al dente. Drain and set aside.

Step 7: Prepare Cream Sauce
In a small bowl, whisk together sour cream, a gravy cube, and 1 tablespoon of cornstarch until smooth. Adjust the gravy cube and cornstarch for flavor and desired thickness.

Step 8: Preheat Oven (Final)
Once the beef is tender, remove the foil and increase oven temperature to 350°F (175°C).

Step 9: Combine and Bake
Remove thyme sprigs from the pan. Gently stir in the cooked noodles and cream sauce until everything is coated evenly.

Step 10: Final Bake
Bake uncovered at 350°F (175°C) for 15 minutes, until heated through and bubbly.

Step 11: Garnish and Serve
Sprinkle with fresh parsley and let rest a few minutes before serving. Enjoy the rich, creamy goodness of this classic Beef Stroganoff Casserole!
