Instructions:
Step 1: Prep & Sauté: Preheat your oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, cooking until the onion turns soft and fragrant.
Step 2: Cook Beef & Vegetables: Add the ground beef and cook until browned. Drain off excess fat, then stir in the diced bell peppers, salt, black pepper, and paprika. Continue cooking for about 5 minutes until the peppers begin to soften.
Step 3: Combine & Transfer: In a large bowl, mix together the diced potatoes, cooked beef mixture, cream of mushroom soup, and milk until everything is evenly coated. Spread the mixture into a greased 9×13-inch baking dish.
Step 4: Bake: Sprinkle the shredded cheddar cheese evenly on top. Cover the dish with aluminum foil and bake for 45 minutes.
