Instructions

Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

Cook the Ground Beef
Heat a large skillet over medium heat and cook the ground beef until fully browned, breaking it up as it cooks. Drain excess grease. Add the taco seasoning and water, stir well, and let the mixture simmer for about 5 minutes until thick and flavorful. Remove from heat and set aside.

Prepare the Crescent Dough
Unroll the crescent roll dough and separate it into 8 triangles. Arrange them flat on the prepared baking sheet, leaving space between each piece.

Assemble the Pocket Tacos
Spoon a portion of the seasoned beef onto the wide end of each dough triangle. Sprinkle with shredded cheese, add a small spoonful of salsa, and top with bell peppers and black olives if using. Fold the dough over the filling to form a pocket, pinching the seams tightly to seal.

Bake
Bake for 12–15 minutes, or until the crescent dough is puffed and golden brown and the cheese is fully melted inside.

Serve
Let the pocket tacos cool slightly before serving. Enjoy them warm with sour cream, shredded lettuce, diced tomatoes, cilantro, and hot sauce if desired.

Cook Notes
For best results, seal the edges of the dough firmly to keep the filling from leaking. You can easily swap cheeses, add corn, diced onions, or jalapeños, and customize the filling to suit your taste. These pocket tacos are flexible, crowd-pleasing, and perfect for quick dinners or high-traffic gatherings.
