How To Make Pecan Pie Cobbler

Step 1: Preheat and Prep
Preheat your oven to 425°F. Grease a 9″ x 13″ casserole dish with non-stick spray.

Step 2: First Pie Crust
Roll out one pie crust into a rectangle and place it in the prepared dish. It does not need to cover the sides completely.

Step 3: Prepare the Filling
In a large bowl, combine 2 ½ cups brown sugar, ½ cup melted butter, 2 ½ cups light corn syrup, 6 lightly beaten eggs, and 4 teaspoons vanilla extract. Mix until smooth.

Step 4: Add Chopped Pecans
Fold in the 2 cups of chopped pecans until evenly distributed.

Step 5: First Layer
Pour half of the pecan mixture over the first pie crust in the dish.

Step 6: Second Pie Crust
Roll out the second pie crust and place it gently over the pecan mixture.

Step 7: Bake the First Layer
Brush the top crust with 1 Tablespoon of melted butter. Bake for about 15 minutes, or until golden brown.

Step 8: Lower Oven Temperature
Remove the cobbler and immediately reduce the oven temperature to 350°F.

Step 9: Second Layer and Topping
Stir the remaining pecan mixture and pour it over the baked crust. Top with 1 ½ cups of pecan halves, arranging them randomly or neatly as desired.

Step 10: Final Bake
Bake at 350°F for 30 minutes until the topping is set and lightly golden.

Step 11: Cool and Serve
Allow the cobbler to cool for at least one hour before slicing. Serve and enjoy this indulgent dessert with family and friends.
