Perfect Vanilla Cupcakes

Ingredients:

Unsalted butter 100g (3.54 oz / ¼ cup + 3 tbsp)
Sugar 100g (3.5 oz / ½ cup)
Salt 1/8 tsp
Eggs 2
Pure vanilla extract 1.5 tsp
Cake flour 150g (5.3 oz / 1 cup)
Baking powder 1 tsp
Milk 100ml

Instructions:

  1. Preheat your oven to 330°F (165°C) and line a muffin pan with cupcake liners.
  2. In a mixing bowl, combine the room-temperature butter, sugar, and a pinch of salt. Using an electric mixer, beat for about 5 minutes until the butter lightens in color and some of the sugar dissolves.
  3. Add the eggs and vanilla extract and continue mixing for another 2 minutes until well combined.
  4. Sift the cake flour and baking powder into the butter mixture. Mix for about one minute until the batter is smooth and lump-free. Using a spatula works if you don’t want to overmix with a mixer.
  5. Add the milk to the batter and mix gently until smooth and slightly dense, creating a soft, fluffy texture.
  6. Transfer the batter into a piping bag for easier portioning, or use a spoon to fill the cupcake liners about three-quarters full.
  7. Bake in the preheated oven for 15–20 minutes until the cupcakes are lightly golden and spring back when touched.
  8. Remove from the oven and place the cupcakes on a cooling rack to cool completely. Serve plain, or top with whipped cream, fruits, or your favorite frosting for a perfect treat.
