Perfectly Moist Marble Cake

Ingredients:

Semisweet chocolate bar, finely chopped 113 grams (4 oz)
Unsalted butter, softened ½ cup (113g)
Vegetable oil ½ cup (120ml)
Granulated sugar 1 ¾ cups (350g)
Large eggs, room temperature 4
Vanilla extract 2 tsp
All-purpose flour 3 cups (375g)
Baking powder 1 Tbsp
Salt ¾ tsp
Buttermilk, room temperature 1 ¼ cups (300ml)

Instructions:

  1. Preheat the oven to 350°F and grease and flour your cake pans. Set aside.
  2. Melt the chocolate in a microwave-safe bowl using 30-second bursts, stirring in between. Continue in 15-second intervals until smooth. Set aside to cool.
  3. In a large mixing bowl, cream together butter, oil, and sugar with an electric or stand mixer until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Scrape down the bowl as needed and stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, alternating with buttermilk, mixing gently with a spatula until just combined.
  6. Transfer about half of the batter into another bowl and fold in the melted chocolate until fully combined.
  7. Pour alternating dollops of vanilla and chocolate batter into prepared pans. Use a knife to swirl for a beautiful marbled effect.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
