Bay leaf 1 small

Instructions

Preheat the Oven:
Preheat your oven to 375°F (190°C) to get it ready for roasting.

Prepare the Pork:
Rub the pork fillet evenly with both the old-fashioned mustard and Dijon mustard, coating all sides thoroughly. Press the chopped garlic gently into the surface of the meat to infuse it with flavor.

Sear the Pork:
Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear the pork on all sides until it develops a golden-brown crust, locking in the juices.

Roast the Pork:
Transfer the seared pork to a roasting pan and place it in the preheated oven. Roast for 25–30 minutes, depending on the thickness of the meat, until it’s cooked through but still tender. Once done, let it rest for 10 minutes before slicing to retain its juiciness.

Caramelize the Onions:
While the pork is roasting, heat the remaining olive oil and the butter in a large pan over medium heat. Add the sliced onions, thyme sprig, and bay leaf. Season with salt and pepper, then cook slowly, stirring occasionally, until the onions become soft, golden, and caramelized. This step gives them that sweet, melt-in-your-mouth texture.

Finish and Serve:
Discard the thyme and bay leaf from the onions. Slice the rested pork tenderloin and serve it with a generous spoonful of the caramelized onions on the side.
