Simple Hamburger Stew

Easy Hamburger Stew

Yukon Gold potatoes, cubed 2
Fire-roasted canned tomatoes 14.5 oz
Low-sodium beef broth 1 ¼ cups
Tomato paste 2 tbsp
Frozen peas 2/3 cup
Salt and pepper to taste

Instructions
Brown the Beef: Warm a large pot or Dutch oven over medium heat. Add the ground beef and cook until fully browned, breaking it apart as it cooks. Drain excess fat if needed.
Sauté Aromatics: Add the chopped onion and minced garlic. Cook for 3–4 minutes until the onion softens and becomes fragrant.
Add Herbs and Veggies: Mix in the oregano, parsley, rosemary, and thyme. Let the herbs bloom for a minute, then stir in the carrots and potatoes until everything is well combined.
Add Tomatoes and Broth: Pour in the fire-roasted tomatoes, including their juices. Add the beef broth and tomato paste, stirring until the paste dissolves into the stew.
Simmer: Bring the mixture to a low boil, then reduce the heat and cover. Let it simmer for 25–30 minutes, stirring occasionally, until the vegetables are tender.
Finish with Peas: Stir in the frozen peas and cook for an additional 5 minutes, just until heated through. Adjust the seasoning with salt and pepper.
