Ingredients

For the Stir-Fry:

Ingredient Quantity
Avocado oil 3 tbsp
Skirt steak 1 lb
Broccoli, cut into florets 1 small head
Zucchini, cut into thick chunks 1 large
Onion, thinly sliced 1 small
Bell pepper, cut into thick slices 1 large

For the Sauce:

Ingredient Quantity
Chicken bone broth 1 ¼ cups
Tamari ½ cup
Coconut sugar 1 tbsp
Fish sauce 1 tbsp
Fresh ginger, finely minced 1 tbsp
Garlic, minced 2–3 cloves
Lime juice Juice of 1 lime
Sesame oil 2 tsp
Crushed red pepper flakes (optional) ½ tsp
Black pepper ¼ tsp
Arrowroot starch 2 tbsp + a few tbsp water or broth to make slurry

Directions

Step 1: Prep the Beef
Place the steak in the freezer for 30–45 minutes to make slicing easier. Cut across the grain into thin ¼-inch diagonal slices.

Step 2: Make the Sauce
In a medium bowl, whisk together all sauce ingredients except the arrowroot starch. Set aside.

Step 3: Cook the Beef
Heat 1–2 tablespoons of avocado oil in a large deep skillet over medium-high heat. Add the beef and sear 2 minutes on each side without stirring. Remove beef from the skillet and set aside.

Step 4: Stir-Fry the Vegetables
In the same skillet, add 1 tablespoon of oil. Toss in the onion, broccoli, bell pepper, and zucchini. Stir-fry for 3–4 minutes until vegetables are crisp-tender. Remove from skillet.

Step 5: Thicken the Sauce
Lower the heat to medium and pour the prepared sauce into the skillet. Simmer 2–3 minutes. Whisk in the arrowroot slurry and stir constantly until the sauce thickens.

Step 6: Combine and Finish
Return the beef and vegetables to the skillet. Stir to coat everything evenly with the thickened sauce. Cook an additional 3–4 minutes, adjusting consistency with a splash of bone broth or water if needed.

Step 7: Serve
Plate the stir-fry over warm rice and garnish with sesame seeds and sliced green onions. Serve immediately and enjoy a flavorful, satisfying meal.

This saucy steak stir-fry is flexible, fast, and irresistibly tasty—perfect for weeknights when you want a wholesome, restaurant-quality dinner without the fuss.
