Slow Cooker Beef Tips

Some meals just bring back memories of home, and beef tips in a rich, creamy sauce over warm noodles is definitely one of them. This dish is perfect for when you want something hearty and comforting, but without spending hours standing over the stove. The slow cooker does the heavy lifting, tenderizing the beef while blending deep, savory flavors into a creamy mushroom-based sauce. Whether you’re feeding a hungry family or prepping a cozy Sunday dinner, this meal hits the mark every time.

What makes this dish so convenient is how versatile it is. You can use sirloin, ribeye, or round steak depending on what you have on hand, and the egg noodles absorb the sauce beautifully. With minimal prep time and a few simple ingredients, this is a meal that feels much fancier than the effort it takes to make. The addition of red wine vinegar adds a subtle brightness that balances the richness of the cream soups and beef. It’s the kind of dinner that brings everyone to the table—ready for seconds. Serve it with a side of steamed vegetables or a fresh salad for a well-rounded and satisfying plate.

Ingredients (Serves 6–8 people)
2 pounds sirloin steak (or round steak, ribeye), cut into cubes
1 small white onion, finely chopped
2 cans cream of mushroom soup
1 cup milk
½ cup red wine vinegar
1 packet dry onion beef soup mix
32 ounces egg noodles, cooked and drained
1 tablespoon olive oil

Instructions
Set your slow cooker or Dutch oven over medium-high heat. Add the olive oil. Once hot, toss in the cubed beef and chopped onion. Cook until the beef is browned on all sides and the onions begin to soften. In a separate bowl, whisk together the cream of mushroom soup, milk, red wine vinegar, and onion beef soup mix until smooth. Pour the mixture over the browned beef and onions in the pot. Stir to combine. Cover and cook on LOW for about 4 hours, or until the beef is tender and the flavors have melded. Once the beef is tender, stir in the cooked egg noodles. Let everything simmer together for an additional 5 to 10 minutes, stirring occasionally to ensure the noodles soak up the sauce. Serve hot.

Nutritional and Dietary Notes
This recipe offers a good source of protein from the beef and energy-rich carbohydrates from the egg noodles, making it satisfying and filling. However, due to the cream-based soups and soup mix, it is higher in sodium and fat, which may not be ideal for those on low-sodium or heart-healthy diets. It also contains gluten and dairy, so it’s not suitable for gluten-free or lactose-intolerant individuals without modifications. You can use low-sodium or dairy-free alternatives if desired.
