Ingredients (Serves 6)
3 lb chuck roast
2 tbsp olive oil
Salt and pepper to taste
1 packet ranch dressing mix
1 packet au jus gravy mix
½ cup (1 stick) salted butter
8 whole pepperoncini peppers
Instructions
Heat a large non-stick skillet over high heat. Add the olive oil and let it get very hot.
Pat the chuck roast dry with paper towels, then season lightly with pepper. Sear the roast in the hot skillet for 2–3 minutes per side, until nicely browned.
Transfer the seared roast to a slow cooker. Sprinkle the ranch dressing mix and au jus gravy mix evenly over the meat.
Place the stick of butter directly on top of the roast, then scatter the pepperoncini peppers on and around the meat.
