Kamote Cue is one of those classic street snacks that instantly takes you back to childhood afternoons and sweet, crunchy treats on a stick. This easy version gives you that same caramel-coated comfort with simple ingredients and a quick cooking process, making it perfect for cravings, snacks, or even weekend gatherings.

Instructions
Peel the sweet potatoes and slice them into half-inch discs. Heat about an inch of oil in a wok over medium heat.
Once the oil is hot, gently add the slices. Fry for 5 minutes, turning occasionally. When they start turning yellow, move on to caramelizing.
Push a few slices aside and pour the brown sugar into the bottom of the wok. Allow it to melt undisturbed for 2 to 4 minutes. Keeping the sugar under the potatoes helps it caramelize evenly.
When the sugar turns smooth and begins coating the camote, start mixing everything together. Continue stirring until each piece is fully covered and reaches your preferred color, usually 5 to 10 minutes.
If using sesame seeds, sprinkle them in during the last minute and mix lightly to avoid breaking the potatoes.
Skewer the caramel-coated slices and serve warm.
NOTES:
Use Asian sweet potatoes such as Japanese, Korean, or Philippine varieties. Their reddish-purple skin and pale, firm flesh help them cook beautifully without turning watery.
