Three Cheese Quiche

This savory quiche is rich, creamy, and loaded with flavor thanks to a blend of three cheeses baked into a silky egg custard. You can keep things easy with a store-bought crust or go all-in with a homemade one if you prefer. Either way, the result is a satisfying, bakery-style dish that works perfectly for breakfast, brunch, lunch, or even a simple dinner paired with a fresh side.

Three-Cheese Quiche

Ingredients

Ingredient Quantity
Pie crust (store-bought or homemade) 9 inches

For the Filling

Ingredient Quantity
Eggs 3
Heavy cream 1/2 cup
Whole milk 1/2 cup
Salt 1/2 teaspoon
Black pepper 1/4 teaspoon
Nutmeg 1/4 teaspoon
Gruyere cheese, shredded 1/2 cup
Swiss cheese, shredded 1/2 cup
Cheddar cheese, shredded 1/2 cup

Instructions

Prepare the Crust (15 minutes)
Preheat the oven to 375°F (190°C). If using a store-bought pie crust, follow the package directions for pre-baking. For a homemade crust, roll out the dough to fit a 9-inch pie dish and gently press it into place. Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 10 minutes, then remove the weights and parchment and bake for another 5 minutes until lightly golden. Allow the crust to cool slightly.

Make the Filling (5 minutes)
In a medium bowl, whisk together the eggs, heavy cream, and whole milk until smooth. Add the salt, black pepper, and nutmeg, and whisk again until fully combined.

Assemble and Bake (50–55 minutes)
Sprinkle the Gruyere, Swiss, and cheddar cheeses evenly over the bottom of the pre-baked crust. Slowly pour the egg mixture over the cheese, making sure it spreads evenly. Place the quiche in the oven and bake for 35–40 minutes, or until the center is set and the top turns golden. A knife inserted in the center should come out clean.

Serve (10 minutes)
Remove the quiche from the oven and let it rest for about 10 minutes before slicing. Cut into wedges and serve warm. This quiche pairs well with a green salad, fruit salad, or roasted vegetables for a complete and satisfying meal.
